Probiotic Delivery through Non-Dairy Plant-Based Food Matrices

Probiotics are live microorganisms which, when administered in adequate amounts, confer a health benefit on the host. Traditionally, dairy products major and most popular probiotic carriers. At present, there is growing demand for non-dairy products. Both fermented non-fermented plant-based food becoming highly appealing to both consumers worldwide. Non-dairy matrices such as fruits, vegetables, milk, cereals, legumes have been used successfully producing with minimum recommended viable numbers at time of consumption. However, due exclusion dairy, whether these can enhance functional properties probiotics gastrointestinal survival immune-enhancing effects needs thorough investigation. Hence, this review focuses some their microbiological quality characteristics terms maintaining viability during product storage. Their tolerance products, other properties, qualities also briefly discussed.
